Welcome to Greendale Cheeses

Our Story

Greendale Farm’s raw cow’s milk cheeses originated in Madison, GA in 2010. Using milk sourced from local dairies, we crafted hard cheeses known for their bold, robust flavor. After five years of production, our family shifted directions and the cheese operation came to a close.

Now, in 2025, we’re excited to bring it back—this time from the suburbs of Atlanta, GA. Our milk still comes from Georgia farm dairies and is now low temperature pasteurized and non-homogenized, allowing us to create both soft and hard cheeses.

Greendale Farm remains a brand and name many of you identify with and I, personally, am looking forward to many years of creative cheese making and enjoying with you!

Greendale Silver Lining

Silver Lining is crafted from pasteurized cow’s milk and matured for 21 days. This bloomy-rind cheese features a striking charcoal-ash line, a silky exterior and a pleasantly chalky core. Ideal for a cheese board, it pairs elegantly with a crisp white wine and a sweet-spicy accompaniment such as pepper jelly or onion marmalade.

Greendale Brie

Greendale Brie is crafted from pasteurized cow’s milk and wrapped in a delicate bloom rind that enhances its gentle, earthy character. Clean and fresh with understated elegance, it brings subtlety and balance to any cheese board.

Greendale Gouda

Gouda has long been Greendale’s signature cheese — smooth, creamy, and effortlessly enjoyable. Handcrafted from pasteurized cow’s milk and aged 30–90 days for balanced flavor and texture.
